Are these appropriate for virtual pinball? What sort of power supply would they require?
The datasheet is pretty clear that this is a contractor that needs AC voltage to turn it on. You need ones that are suitable for 24V DC. Look for a model number like this 3RT1016-1BB41. I think the 3RT1015 series are also 24V DC. Here are two fairly cheap to get you started. The tall thingy sticking up is a surge suppressor should save you needing a diode for the contactor.
And I second the recommendation for you should read MJR's build guide. It should answer a lot of your questions.
