For me also Congo from JP, No Fear and also Centaur (Im a bit greedy, i know).

Of course centaur is a fantastic table,its one of my favorites but somehow i was dreaming to see a better lightshow.

The real table itself doesn't have flashers or anything earth shattering for lighting. It had a slight separation of GI from the rest of the table for the chamber area (individual bulbs / sequences) and the slingshots, which was fixed / made authentic to the real deal in the version above that fuzzel and I made.
I did a ton of extra (and sometimes subtle) lighting enhancements that I felt made it extremely warm and realistic looking, including things like every lamp / insert having an additional "lamp halo" layer (on top of the regular light objects - like 50 or 60 of them), only allowing slight light leakage through the top of the black plastic areas (as matched with photo and video references) and doubling up on alpha GI objects underneath the already PS GI drawn main global alpha plastic fading textures, yet above the ball, for extra lighting interaction with it (common enough now but much time was spent creating the textures - both the incandescent and the LED versions). Even the back metal guides and upper backing / chrome piece were textured and coded to slightly change when the table GI was triggered on / off plus reflections of the roll-over lights incorporated. The bumper 3D meshes were all redone to have fading and the appearance of a filament / bulb growing in intensity and lit from underneath. Seriously, if you look at the release notes from the link above you'll see 9 or 10 points regarding the lighting / GI alone.
I know you worded it like if you could dream for something better on it but I really don't know what else we could have added without a new rendering / lighting engine for VP or simply a different table as the subject. I'd like to think that the reason all those enhancements don't grab your's or other people's attention too much is that they were intentionally done to be subtle, like most lighting and shadows on a real table. When the lighting is too noticeable at times, in efforts to help make up for what we can't get from simulations, we sometimes just make a simulation look more like a video game.
