I think there is no arbitrary layback and other settings that could be applied as a guideline. On some tables, even 90 layback (with matching FOV, inclination etc.) works fine, on others 80 or even lower is too much. It is influenced by how the particular table is built.
My point is always that I don't like to see much of the backside of the flippers, because that's not realistic and reminds me of the old FS settings that seemed to be applied to all tables, like 45 inclination and so on.
But as it was pointed out earlier, this is mostly personal preference and also depends on what your real life view of a table is. Since I'm 6' 6" (197 cm) tall, my point of view is more from above compared to someone who is a lot shorter.
