Friction and steepness of table. Flippers, Slings and bumpers also has strength settings. Be aware though. Once you change any of those, the table will start to play differently. You may see a lot of ball spin pr. example. Well made tables has a balance between all elements. IF you are set to change this. My suggestion is to find a table that plays approximately at the speed you want and of course, where this has been fine tuned to perfection already. Now, you can look at what values eg. rubbers, pins, flippers etc uses and transfer them to your modification.

 

I suggest looking at JPS Arcade Physics - even if you want the table to play like that or not.
